Plant Milk

This year, the Fun Food Feed will be sharing our most loved whole-plant recipes, we’ve developed over the years.  Each month, we will publish a favorite recipe.

This month’s featured recipe is for Plant Milk.

Food generally tastes best when freshly prepared, and plant milk is no exception.

Preparing only the amount immediately desired eliminates risk of spoilage.

Enjoying plant milk unstrained saves time and labor, and provides nourishing fiber.  If one wishes to minimize fiber without straining, simply refrigerate overnight, and fiber will settle to the bottom of the container.

As little as 1 Tablespoon of oats or nuts yields a cup of flavorful, fresh plant milk.

One can customize each cup with favorite spices, fruits and extracts.

Plant Milk

Preparation Time: 2 minutes
Yield: 1 cup

Ingredients:

1 cup water
1 -2 Tablespoons rolled oats and/or raw nuts/seeds

Optional: Few drops of extract like vanilla, almond, coconut or mint, to taste
Optional: Vanilla bean seeds, mint leaves, to taste
Optional: Pinch salt, to taste
Optional: Pinch cinnamon, cardamom, saffron, nutmeg, ginger, allspice, to taste
Optional: 1-2 dates, pitted, (or slices of fruit) to taste
Optional: Tablespoon of favorite breakfast cereal, to taste

Equipment:

Measuring cups & spoons
High speed blender (e.g. Vitamix)

Steps:

  1. In high-speed blender, on high, blend ingredients for 40 seconds. (Note: Oats can begin to become “slimy” after 40 seconds of high-speed blending, as plant milk starts heating up.)

2. No need to strain nourishing fiber.  Enjoy immediately, or refrigerate up to three days.
